Pasta all'arrabbiata

 

Pasta all'arrabbiata is a classic Italian dish known for its spicy tomato sauce. Well here's a version with Fijian heat kick! 

What you need

🌶️ Olive oil
🌶️ 225g pasta
🌶️ 3 cloves of garlic, minced
🌶️ Fiji Fire Original Hot Sauce 
🌶️ 2 tablespoons tomato paste
🌶️ 4 fresh large tomato's
🌶️ 1 teaspoon dried oregano
🌶️ Salt and pepper to taste
🌶️ Grated Parmesan cheese (optional, for serving)
🌶️ Fresh basil leaves, chopped (for garnish)
The Method
  1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Reserve about 1/2 cup of pasta water before draining and set aside.

  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and three table spoons of Fiji Fire to the skillet and sauté for 1-2 minutes until fragrant. Be careful not to burn the garlic.

  3. Add the diced tomatoes to the skillet along with dried oregano, salt, and pepper. Stir well to combine. Allow the sauce to simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.

  4. Once the sauce has thickened, add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss everything together until the pasta is evenly coated with the sauce.

  5. Taste and adjust seasoning if necessary. If you like, add some freshly chopped basil leaves for extra flavor.

  6. Serve the pasta all'arrabbiata hot, garnished with grated Parmesan cheese if desired.
