Vegetarian Chilli with a Fiji Fire Kick!

This Vegetarian Chilli with a Fiji Fire kick is perfect for a dinner with friends or family! 

 

What you need

🌶️ Olive oil
🌶️ 1 large onion
🌶️ 3 cloves of garlic, chopped
🌶️ Fiji Fire Original Hot Sauce 
🌶️ 2 Carrots, diced
🌶️ 2 Bell peppers
🌶️ 2 stalks celery, diced
🌶️ 1 can of chopped tomato's
🌶️ 1 can of kidney beans, drained and rinsed
🌶️ 1 can of Black beans, drained and rinsed
🌶️ Salt and pepper to taste
🌶️ 1 tablespoon cumin
🌶️ 1 teaspoon paprika
🌶️ Optional toppings: grated cheese, salsa, Fiji Fire Original Hot Sauce, sour        cream
The Method
  1. Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.

  2. Add the minced garlic and cook for another minute until fragrant.

  3. Add the diced bell pepper, carrots to the pot. Cook for about 5-7 minutes until the vegetables begin to soften.

  4. Stir in the diced tomatoes, kidney beans, black beans, vegetable broth, Fiji Fire Original Hot Sauce (as much as you like to taste), cumin, paprika, salt, and pepper.

  5. Bring the chili to a simmer, then reduce the heat to low. Let it simmer for about 20-30 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.

  6. Taste and adjust seasoning if needed.

  7. Serve hot, garnished with your favorite toppings such as grated cheese, salsa, extra Fiji Fire Original Hot Sauce or sour cream.
