What you need
🌶️ 1 large onion
🌶️ Fiji Fire Original Hot Sauce
-
Heat olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
-
Add the minced garlic and cook for another minute until fragrant.
-
Add the diced bell pepper, carrots to the pot. Cook for about 5-7 minutes until the vegetables begin to soften.
-
Stir in the diced tomatoes, kidney beans, black beans, vegetable broth, Fiji Fire Original Hot Sauce (as much as you like to taste), cumin, paprika, salt, and pepper.
-
Bring the chili to a simmer, then reduce the heat to low. Let it simmer for about 20-30 minutes, stirring occasionally, until the vegetables are tender and the flavors have melded together.
-
Taste and adjust seasoning if needed.
-
Serve hot, garnished with your favorite toppings such as grated cheese, salsa, extra Fiji Fire Original Hot Sauce or sour cream.
Enjoy your hearty and flavorful vegetarian chili!
