What you need
🌶️ Eggs (2-3 per person)
🌶️ Fiji Fire Hot Sauce
🌶️ Salt and pepper to taste
🌶️ Butter for cooking
🌶️ Chopped fresh parsley
🌶️ Optional additions grated cheese
🌶️ Soda Bread (a chunky slice)
What you need
Crack the eggs into a mixing bowl. Add a pinch of salt and pepper to taste, and if you wish your grated cheese.
Beat the eggs with a fork or whisk until the yolks and whites are well combined and slightly frothy.
Cut a big wedge slice of sourdough bread so its ready to toast.
Heat your frying pan over low heat. Add a small amount of butter to the pan and let it melt.
Pour the beaten eggs into the pan, stirring gently with a spatula as they begin to cook, keep the heat low it will take longer but the eggs will tase more delicious.
Continue stirring and folding the eggs as they cook, scraping the bottom and sides of the pan to create large, soft curds.
Toast your sourdough slice.
When the eggs are mostly set but still slightly runny, remove the pan from the heat. The residual heat will finish cooking the eggs without overcooking them.
Place the scrambled eggs onto your sourdough toast, add lashings of Fiji Fire Original Hot Sauce and sprinkle the fresh chopped parsley over.
Serve the scrambled eggs immediately while they're still warm.
